Hey yall! When I’m feeling super toxic and unhealthy, I make this delish vegan soup to help get my health back on track ASAP! Fun Fact: I do not measure anything so literally just try to add as much or as little as you like. Enjoy!

What you’ll need:

1 carton of vegetable broth

1 chopped yellow onion

Chopped celery (3 stocks)

Spinach (half a bag)

1 chopped yellow squash

1 chopped zucchini

Chopped carrots

1 can kidney beans(drained)

1 big can of crushed tomatoes

1 can of diced tomatoes (drained)


1-2 cloves garlic



Cayenne Pepper


In a skillet sauteed all of your chopped raw veggies in a little bit of extra virgin olive oil. Then in a giant soup pot (this makes a big batch because there are so many ingredients) combine mostly cooked veggies with vegetable broth, crushed tomatoes, drained beans and drained diced tomatoes. Then add your seasonings. I do the most garlic and cayenne. Turmeric is strong and sometimes can be overpowering, so I just use a little bit of that. Then obviously salt and pepper as desired. Let simmer on the stove top for 30 minutes and then you’re done!

PERFECT for fall and great for your waist line year round!
